1. Brew Ratio: Precision for Balance
Our precise recommendation for a balanced and flavorful filter brew is a 1:16 coffee-to-water ratio. This means utilizing 62.5 grams of coffee for every liter of filtered water. This ratio has been extensively tested to deliver a harmonious extraction, showcasing the inherent complexities and sweetness of our coffees without over or under-extraction, which can lead to bitterness or weakness, respectively. Maintaining this ratio is crucial for consistency across various batch sizes.
2. Grind Size: Optimizing Surface Area for Extraction
For optimal flow and extraction efficiency, aim for a medium-coarse grind. The ideal texture should be uniform, resembling that of clean beach sand. A grind that is too fine can lead to over-extraction, clogging, and a bitter, astringent cup, while a grind that is too coarse will result in under-extraction, a thin body, and a sour, underdeveloped flavor profile. Consistent grind particle distribution is paramount for uniform extraction across the entire coffee bed.
3. Initial Extraction Enhancement: The Importance of Agitation
Technique: We highly recommend incorporating a gentle but thorough agitation of the coffee bed immediately after the initial bloom or pour. This can be effectively achieved by using a clean spoon to gently stir the coffee grounds, ensuring all particles are fully saturated.
Purpose: This critical step serves to eliminate "dry pockets" or air channels within the coffee bed that can hinder even water distribution.
